Rinse quinoa in a fine-mesh sieve. Cook in 2 cups of broth on low heat for 15 minutes until fluffy and liquid is absorbed. Fluff with a fork and let cool.
Heat a large non-stick skillet over medium-high heat. Add lean ground sirloin and cook for 6 to 8 minutes, breaking up with a wooden spoon until browned.
Add taco seasoning, canned green chilis, sweet corn, and 1/3 cup broth. Simmer over medium-low heat for 4 minutes until sauce thickens and glazes the meat.
Divide cooked quinoa evenly across four meal prep containers as the base.
Spoon 3/4 cup of warm seasoned taco meat over one half of each quinoa container.
In the separate side compartment, pack shredded romaine lettuce, cotija crumbles, and olives.
